Amaranthus-Totakoora
Description
Totakoora, or Amaranthus viridis is a green variety of Amaranthus popular all through out South India, but is actually native to the Southern United States and Mexico among other tropical and subtropical regions of the world. It's rounded stems may have some ridges and it's leaves are mid to light green and deeply veined, with small, green flowers. Totakoora (or thotakura as in Telegu, or Kuppacheera in Malayalam) provides excellent roughage in your diet and is rich in calcium, iron and vitamin A and C. Cook it into your next daal!
