Arai keerai, sometimes called spleen amaranth or Amaranthus dubius, is a variety of amaranthus popular in Tamil Nadu. Keerai leaves have medicinal qualities and are high in vitamin C, vitamin A, calcium, potassium, and folate, and contain iron, magnesium, and phosphorus. It is used as a delicious substitute for spinach and an essential ingredient! Keerai leaves can be used both raw in a salad, or cooked in soups, stir-fries, rice dishes, dals, and curries.
